Some people meal prep twelve different recipes every Sunday.

I discovered something much simpler: find a few meals your body consistently loves, then repeat them often enough that healthy eating becomes easy instead of exhausting.

This bowl became one of my defaults because it checks almost every box:

  • fast,
  • satisfying,

  • stable energy,
  • minimal cleanup,
  • and emotionally comforting without feeling heavy.

Most importantly: my body consistently tolerates it well. No heartburn. No food coma. No regret. Just stable energy and calm.


Ingredients

Bowl

  • 1/2 avocado
  • 5–6 oz cherry tomatoes
  • 2 soft-boiled eggs
    (hard-boiled works too)
  • 1 Babybel cheese round
    or ~1 oz mild cheese of choice
  • truffle salt
  • small drizzle of truffle oil
  • black pepper (optional)

Side Carb

  • rice cakes

Prep Time

5 minutes
(10 if you lovingly overthink your egg texture 😂)


Instructions

  1. Soft boil eggs to preferred texture.
  2. Slice avocado and cherry tomatoes.
  3. Add cheese.
  4. Drizzle lightly with truffle oil.
  5. Finish with truffle salt and black pepper.
  6. Eat with rice cakes on the side.
